ANALISIS NILAI TAMBAH UBI KAYU SEBAGAI BAHAN BAKU KERIPIK SINGKONG DI DESA NAGORI DOLOK KECAMATAN SILOUKAHEAN

Abstract

Penelitian ini bertujuan untuk mengetahui seberapa besar nilai tambah ubi sebagai bahan baku keripik singkong oleh pengusaha sekaligus petani dan pengusaha bukan petani. Penelitian ini dilakukan dengan menggunakan metode deskriptif. Penentuan tempat penelitian dilakukan oleh peneliti sendiri dengan alasan tempat penelitian adalah tempat tinggal peneliti yaitu desa Nagori Dolok Kecamatan Silou kahean Kabupaten Simalungun. Nilai tambah pengolah ubi kayu menjadi keripik singkong untuk kelompok pengusaha sekaligus petani mulai dari pencabutan sampai dengan pengemasan memperoleh nilai tambah Rp/hari sampai dengan Rp/Bulan selama 30 hari.  Untuk kegiatan pencabutan memiliki nilai tambah sebesar Rp 29.362/hari sehingga diperoleh nilai tambah dalam satu bulan (30 hari) sebesar Rp 29.362 dikali 30 hari menjadi Rp 880.860. Keuntungan yang diperoleh dalam satu kali produksi sebesar Rp 104.305,58/hari. Jika dihitung dalam satu bulan (30 hari) yaitu Rp 104.305,58 x 30 hari = Rp 3.129.267,4 Nilai tambah pengolaha ubi kayu menjadi keripik singkong untuk kelompok pengusaha bukan petani pembelian sampai pengemasan. Untuk kegiatan pembelian memiliki nilai tambah sebesar Rp 26.792/hari sehingga diperoleh nilai tambah dalam satu bulan (30 hari) sebesar Rp 26.792 dikali 30 hari menjadi Rp 803.760. Untuk bahan baku ubi kayu daam satu kilo gram ubi memperoleh harga Rp 3.000 sehingga untuk 20 Kg bahan baku harga bahan baku menjadi Rp 60.000. dengan nilai total biaya sebesar Rp 255.694,42 untuk bahan baku 20Kg. Sehingga dapat diperoleh untuk  1kg bahan baku total biaya yang diperlukan menjadi Rp 12.784,72 hal ini dapat dihitung dari jumlah total biaya Rp 255.694,42 : 20Kg = Rp 12.784,72 Keuntungan yang diperoleh dalam satu kali produksi sebesar Rp 44.305,58/hari. Maka dalam 30 hari produksi keuntungan yang diperoleh adalah Rp 44.305,58 x 30 hari = Rp 1.329.167,4

This study aims to determine how much added value of sweet potato as raw material for cassava chips by entrepreneurs as well as farmers and non-farmers entrepreneurs. This research was conducted using descriptive method. The determination of the place of research was carried out by the researcher himself on the grounds that the place of research was the residence of the researcher, namely the village of Nagori Dolok, Silou Kahean District, Simalungun Regency. The added value of processing cassava into cassava chips for groups of entrepreneurs as well as farmers, starting from extraction to packaging, gets an added value of Rp./day up to Rp./month for 30 days. The revocation activity has an added value of Rp 29,362/day so that the added value in one month (30 days) is Rp 29,362 multiplied by 30 days to Rp 880,860. The profit obtained in one production is Rp. 104,305.58/day. If it is calculated in one month (30 days) that is IDR 104,305.58 x 30 days = IDR 3,129,267.4 The added value of processing cassava into cassava chips for groups of non-farmer entrepreneurs from purchasing to packaging.
